GARBOLE BOUTIQUE WINERY
RECIOTO DELL A VALPOLICELLA DOP 2017
DESCRIPTION
ORGANOLEPTIC:
Wine with an intense ruby red color tending to garnet with hints of plum, cherry
jam, and almond, all well blended with a pleasant balsamic vein and a note of fresh
mint, which along with hints of vanilla, coffee, and chocolate
give the wine olfactory complexity. Dense wine with a great taste persistence,
characterized by an excellent balance between sweetness and acidity.
GRAPES: 85% Corvina veronese, Corvinone, rondinella; 15% other grapes
TRAINING SYSTEM
AND PLANT DENSITY:
Simple Guyot with a low trunk of about 70 – 80 cm on which a fruiting head
with about 8 – 10 buds is inserted; 4500 - 5500 vines per hectare
YIELD PER HECTARE: 60 q.li per hectare
HARVEST TIME AND MANAGEMENT:
The entirely manual harvest, starting from mid-September, lasts
for about 35-40 days and is carried out in several stages according to the degree of
ripeness of the grapes and with the utmost selection of the best bunches.
DRYING: The grapes are placed to rest in small wooden boxes of about 4 – 5 Kg each,
and placed in the drying room, where they will remain for a period of about 120-150 days of
drying which, thanks to natural concentration, will result in a decrease of about
40% of their weight.
VINIFICATION: After destemming/crushing, the must is fermented in stainless steel
tanks at controlled temperature.
AGING: Aging in new wood for 36 months and at least one year in bottle.
