Climate
The 2025 vintage began with a mild and moderately rainy winter,
which allowed for the formation and accumulation of good water reserves in the
soil. The growing season was generally dry, both in
spring, characterized by normal temperatures, and during the summer,
marked by a predominantly warm climate with good temperature variations
between day and night. The ventilation provided by breezes from the
Adriatic Sea helped preserve the aromas and freshness of the grapes.
The careful soil management and attentive canopy management,
keeping the clusters aerated without excessively exposing them to sunlight,
favored an optimal vegetative-productive balance during
the summer.
The harvest of the grapes destined for Calafuria was carried out between the end of
August and September 18, in line with the average of recent vintages.
Winemaking and aging
The grapes, immediately after harvest, were destemmed and softly pressed. The must obtained was transferred to stainless steel tanks at
12 °C to achieve natural clarification; here
alcoholic fermentation took place, conducted at a temperature of
16 °C, to preserve and enhance the aromatic component. Calafuria has
aged for a short period in steel in contact with its own yeasts before
bottling and subsequent market release.

Masseria Maìme is located in one of the most beautiful areas of Alto Salento, not
far from the town of San Pietro Vernotico – Brindisi. The estate extends along the coast, creating a unique landscape of vineyards that grow
between woods and pine forests and stretch out of sight until they blend with the
sea. The most common varieties are: Negroamaro, Primitivo, Syrah, Cabernet, and Chardonnay.
Calafuria comes from vineyards that extend along the Adriatic coast. It takes its name from one of the over 700
bays found in Puglia. The region boasts a long tradition in the production of rosé wines made from
Negroamaro, a grape variety that expresses its potential best near the sea. A delicate rosé,
pleasantly fruity, savory, and broad, capable of conveying the aromas and colors of the production territory, Salento.
