L’uva raccolta a giusta maturazione tecnologica e aromatica viene vinificata in bianco con breve macerazione delle bucce a temperature basse per ottimizzare l’estrazione dei profumi e la fermentazione in acciaio a temperatura controllata di 15-16 °C. Segue un opportuno affinamento sui lieviti.
