Chianti wine is the iconic wine of Tuscany, a centuries-old tradition given that Chianti was one of the first wine-producing areas to be regulated and defined by a law, issued on 24 September 1716 by Grand Duke Cosimo III de' Medici and in which the borders of the Chianti, Pomino, Carmignano and Val d'Arno di Sopra regions were defined. Today, Chianti presents different declinations, from Chianti Classico DOCG to Chianti DOCG with seven sub-zones, the one defined as 'Chianti Classico' is the largest and also includes other localities in the province of Florence and Siena, the area included in the Chianti DOCG denomination instead also includes the provinces of Pisa and Arezzo and a much larger and more complex territory as demonstrated by its seven sub-zones. The wines are produced with 70% Sangiovese grapes, with a maximum of 15% Cabernet and a maximum of 10% local white grapes, in keeping with the tradition defined by Count Ricasoli. The reference vine is therefore Sangiovese, with its structure, tannicity, freshness and ability to age best in wooden barrels.
