Champagne Dom Perignon is named after Pierre Pérignon, a French Benedictine monk, recognised by most as the originator of Champagne. Dom Pérignon had several important intuitions for the production of Champagne: for example, he had the vines cultivated in such a way as to make them produce less in order to increase the quality of the bunches, he understood that the harvest had to take place at the moment of the optimal degree of ripeness of the grapes and that each production zone presented a different value of the vineyards (Cru), he defined a more delicate pressing of the grapes that gave origin to the "Blancs", with a less pregnant colouring and free from the astringency of the tannins. Dom Pérignon also invented assemblage and cuvées, with these methods he realised that by blending different wines it was possible to compensate for the weaknesses of some with the strengths of others. Thanks to the accidental explosion of some bottles, he devised a more effective system of refermentation in the bottle, which involved the use of cork stoppers for a more hermetic closure of the bottles.
