Amarone della Valpolicella is a wine made from the fermentation of dried grapes of the typical Valpolicella grape varieties, from Corvina (45-95%) to Rondinella (5-30%) and Corvinone (up to 50% max. to replace Corvina). The production area of Amarone DOCG ranges from the foothills of the province of Verona to Lake Garda, almost up to the border with the province of Vicenza. The 'Classico' appellation of Amarone DOCG is the oldest and includes the municipalities of Negrar, Marano, Fumane, Sant'Ambrogio, and San Pietro in Cariano. Starting in September, the Amarone della Valpolicella wine is decanted into oak barrels where it is left to age for at least three years, while for the Riserva the ageing period increases to four years. Amarone della Valpolicella is a ruby-garnet coloured wine with orange reflections, it is also a full-bodied and structured wine with a usually high alcohol content (minimum 14% by volume). Amarone wine contains polyhydric alcohols and extractive substances in significant quantities, which makes this wine soft and pleasant to drink with very dense tannins that are smoothed out by virtue of the years of ageing in wood.
