Pinot Noir „Aton“ Riserva Alto Adige DOC 2018 Elena Walch
The harvest took place on September 9, 2017. Once the grapes arrived in the modern fermentation cellar, they underwent the destemming process, which leaves the berries intact and which, by means of small cuvons, are transferred by gravity into small truncated steel barrels. This was followed by a 5-day cold maceration and fermentation at a controlled temperature of 23°, for an additional 15 days, in the small steel barrels. This was followed by a 12-month period in medium-toasted French oak barrels, after which the wine rested and matured in steel for a further 11 months.
Slow and gentle processing was carried out respecting the original quality of the grapes, and following the same principle finally, on August 22, 2019 the wine was bottled without filtration to maintain its exceptional structure and preserve its natural colloidal composition. During the subsequent 15 months of bottle maturation, "Aton" Pinot Noir Reserve 2018 silently continued to evolve the broad spectrum of its potential until and be ready for targeted distribution from October 4, 2021. The precious Grande Cuvée can achieve significant longevity during which the product will continue to mature and evolve.
