It exhibits a brilliant golden texture, with straw and silver reflections, of exceptional clarity. The nose opens with notes of breadfruit, cinnamon, nutmeg and honey, evolving into tropical cooked fruit (banana, pineapple) and cream/vanilla aromas, for a very classy bouquet. In the mouth, the initial approach is severe, concentrated, reminiscent of sherry, honey and moderately spicy; the palate expands to touch baked fruit (nectarines), cloves, plums, black raisins. The finish reveals great finesse and aromatic complexity. Ideal at the end of a meal, it elegantly accompanies bitter chocolate.
Those of Sangiovese and Merlot grown for the production of Luce. The Merlot and Sangiovese marc ferments for a long time with the relative must, so distillation takes place as soon as it arrives at the distillery in October. Distillerie Poli's still is one of the oldest stills stills still in operation: it consists of cauldrons made entirely of copper, as in the past. The grape pomace is heated with flowing steam and the processing method is artisanal (discontinuous cycle): the grape pomace is loaded into the stills and distilled - the so-called ‘cotta’ is made; after about three hours, when the raw material is exhausted, the stills are unloaded and refilled with fresh pomace, ready for another cotta. Raised in 225-litre Allier barriques for three years. Store away from light in a cool, dry place. We recommend serving the distillate in a tulip glass at a temperature of 18-20° C.
