Fumin vigne Rovettaz 2018 Vallée d'Aoste DOC
A site of ancient viticultural tradition at 550 m a.s.l. on a steep slope with southern exposure, in a particularly dry and ventilated climate with excellent luminosity and large temperature range during grape ripening, where by our choice, only eco-friendly agronomic techniques are used. After one year of aging, it is bottled and kept at least 6 more months in the bottle before being sold. It has a very intense ruby red color, on the nose it is complex with fruity scents, morello cherry in particular, with not too evident spicy notes and a complexity of underbrush, in the mouth it is dry tannic but not aggressive with soft and long tannins.It likes a long aging in bottle, even 4-5 years.

Soil: Sandy-loamy and partly loamy-sandy with shallow depth (less than 50 cm) and abundance of skeleton.
Cultural Operations: Partly mechanical and partly manual, with techniques allowed only in organic farming.
Fertilization is carried out with the addition of organic matter (manure).

Harvest: Between late October and early November Grape varieties: 100% Fumin Vinification: In stainless steel with destemmed grapes, no addition of selected yeasts, maceration with skins for 30 to 40 days with three punching-downs per day at controlled temperature
Aging: In French barriques for 12/15 months, 15/18 months in bottle
