50% Sangiovese, 50% Cabernet Sauvignon.
1988 saw the birth of the first bottle of Roccato, a wine that, imagined and desired by Italo and Sergio and based on equal parts Sangiovese and Cabernet Sauvignon grapes, represents the essence of the winery's journey. In fact, just as Rocca delle Macìe, which started out from the tradition of Chianti Classico and opened up to innovation without ever forgetting its origins, so too Roccato represents the encounter between the most typical roots of Sangiovese and the modernity symbolised by Cabernet and the barriques used for ageing.
Production technique
After careful selection of the grapes, vinification follows using the most advanced cellar techniques, ending with ageing in French oak barriques for a period of 9 to 13 months. The two varieties are harvested, vinified and matured separately, only to be blended at the end of the wood maturation process. After blending, the wine matures for a further three months in 35hl barrels before spending another year in the bottle.
Organoleptic characteristics
Colour: very intense ruby red tending to garnet with ageing.
Nose: broad and persistent, with hints of red fruits and spices ranging from cocoa to vanilla to coffee. An enveloping and velvety wine with rich aromas of blackberries, plums and liquorice, it has a good mineral component and a tannic structure capable of sustaining it for many years of ageing.
Taste: warm and well balanced, with a dense network of tannins that well support and sustain the long aromatic persistence.
Winemaker's recommendations
A wine for long ageing, it accompanies important red meat and game dishes, as well as mature cheeses.
Serve at a temperature of 18°-20° C.
