VINEYARD
Monte Sant'Urbano property, in the commune of Fumane. It covers an area of 19 hectares. It is situated on a hill with an altitude ranging from 280 to 350 m/s.l.m. and enjoys excellent sun exposure. The limestone-cretaceous soil of volcanic origin favors the retention of moisture, preventing drought.
CULTIVATION SYSTEM
Veronese pergola planting placed on crags supported by dry-stone walls, called "marogne." High average age of the vines.
HARVEST
Manual selection of the best bunches from late September to mid-October. Drying out for 100 days in fruit lofts under optimal conditions of temperature, humidity and ventilation. During these months the grapes lose about 42% of their initial weight with a considerable increase in sugars. VINIFICATION Crushing in January with a roller crusher-destemmer. Maceration in stainless steel tanks for a period of 35 days with periodic pumping over and délestage at a temperature of 16° - 18°C. Separation of skins in mid-February and completion of alcoholic and malolactic fermentation in 50 hl oak barrels. Aging in 500 l Allier oak tonneaux for 24 months and in 20-40 hl oak barrels for another 12 months. Subsequent aging in bottle.

ORGANOLEPTIC CHARACTERISTICS.
Intense garnet red in color, it has an ethereal aroma of dried fruit. On the palate it is full-bodied, warm, enveloping and dry. An important wine of rare elegance, it lends itself well to aging. GASTRONOMIC PAIRING Suitable with robust main courses of red meats such as braised meats and game, excellent with aged cheeses. Also recommended at the end of a good meal. SERVING TEMPERATURE 18°C.
