Vinificazione parcellare in botti di rovere (600lt)

Selezione di cuvées frutto delle più vecchie vigne dell’azienda (50 anni) situate nelle migliori esposizioni sulle colline di Avize ( Les Robarts, la Voie d Epernay ). Esposte a sud, sud-est su dei « Coteaux » con suolo alrgilloso-calcareo.

La fermentazione malolattica è completa.L imbottigliamento è stato effettuato, senza filtrazione, nel maggio 2005, con tappo in sughero e graffa.Il vino ha maturato durante 4 anni sui lieviti.

Il rémuage è stato fatto manualmente.

La data di sboccatura è minimo di 60 giorni prima della commercializzazione, ed è indicata in retro etichetta.

Il dosaggio è limitato a 5 g di zucchero/Litro.SO2 50 mg / litro
