This champagne, which has spent 13 years on the lees sealed with a cork (bouchon liège, a feature of DP enothèque), Richard calls it precise and vibrant, intense and dynamic, but it speaks very sharply of Dom Pérignon in high definition and avant-garde essence. It is his way of expressing his creatures, but to enhance the energy inherent in this wine, he personally went to Iceland for photo sessions, so as to represent also with images his vision of P2 and, indeed, of its age of energy.
Dom Pérignon P2 1998 45% Pinot Noir, 55% Chardonnay; dosage 5 g/ldég. 2012
Opulent, deep nose, concentrated fruit alongside DP typicity (lots of minerality and a touch of herbs), but also smoky notes and a hint of honey that identifies a tenuous underlying maturity. Mouth very fine in the bubble, round and polished in the matter, even thick, even chewy, with a citrus vein that enhances the freshness and soars the fruit to the tasty finish, pervaded by mineral returns. It is a very elegant champagne but also concentrated (I would not speak of mere persistence, but rather of tenacious attachment to the palate),It is a champagne that will reveal its full potential over at least 30 years.
