70% Pinot Noir e 30% Chardonnay, di cui circa il 50% con vini di riserva.

Vinificazione in legno per il 20%. Fermentazione naturale senza lieviti aggiunti, si utilizzano solo lieviti indigeni. Primo élevage sui lieviti che dura circa un anno senza bruciare le tappe; il vino si chiarifica lentamente come si faceva 50 anni fa. Messa in bottiglia senza filtraggio né collatura. Dosage 2 g/l.
