Colour: Pale straw yellow. Delicious sparkling wine with fine and persistent "perlage".
Nose: Broad, complex, deep with hints of lime blossom, honey, ripe white fruit, citrus and bread crust

Vintage 2016
2016 had one of the longest growing cycles in recent years. February and March had low temperatures and abundant rainfall, which caused a phenological delay of about 10 days that was made up in August and even more so in September. Full ripeness was achieved in all the wines, which show excellent balance, complex aromas and great structure. All this, together with a harvest with good quantity, allows 2016 to be remembered as an exceptional vintage.

Wine-making information
Fermentation process: The grapes are hand-selected on the vibrating table and pressed in an inert environment (nitrogen) with a yield in free-run juice of 45%. The entire process takes place without the use of augers in order to treat the grapes as gently as possible. The must is fermented in temperature-controlled stainless steel tanks and stored for 6 months on the lees with bâtonnage. Classical Method: Refermentation is carried out according to the traditional method of bottle fermentation, with ageing on the lees for at least 72 months and late disgorgement. We proudly avoid any liqueur d'expédition by making ZERO as Pas Dosè. Zero Pas Dosé is the sparkling wine that best represents Enrico Serafino Alta Langa. The complexity of the terroir is fully expressed through the meticulous execution of every step from vine to wine. Produced starting with the 2004 vintage, it is, by far, the first Alta Langa Pas Dosé ever produced. The decision to avoid any dosage combined with late disgorgement allows ZERO Pas Dosé Enrico Serafino to assert its evident singularity.
