Gillo Dorfles 2017 San Salvatore IGP Paestum Aglianico (6L)
Gillo Dorfles was a 20th century Italian genius, in love with Paestum and the majesty of its history. He spent his summers among art, the sea, the temples. And in our vineyards. Ruby-coloured, it is a red wine of important calibre, after ageing for 24 months in French oak barriques, which aims to win you over from the very first glass but also to be able to challenge time. Just like Gillo.
Tasting notes
To the eye: Bright ruby red, compact, with nuances turning to garnet.
Nose: Wide and fascinating aromatic range, giving intense fruity aromas of cherries in spirit, blueberry jam and raspberries. Sweet spicy notes of pink pepper, cinnamon and liquorice. Balsamic notes accompanied by hints of vanilla and mustard.
Taste: Warm and enveloping sip with great acidity, velvety and intense tannin. Aristocratic tannic finesse. Gives the palate crisp, vibrant, refined and sumptuous sensations. Great olfactory persistence. A dynamic wine in full evolutionary phase, holding timeless ageing potential.

100% Aglianico grapes selected in the vineyard at first light in September.
Production area capaccio-paestum locality cannito, altitude 150-210 m above sea level, southwest exposure.
Type of soil clay-limestone, espalier training system with guyot pruning, pruning-tying with willows, defoliation-thinning-manual harvesting.
Average plant age 17 years, yield 50hl/ha.
Vinification fermentation in steel at controlled temperature for 30 days.
Maturation 24 months in new French oak barriques, 1/3 allier, 1/3 nevers and 1/3 troncais. One year of bottle ageing follows.
Alcohol 15% vol.
Bottles produced 8,850 bottles of 750 ml, 250 of 1.5 litres, 120 of 3 litres, 20 of 6 litres.
Pairings Ideal with large grilled red meat dishes, braised meats or mature cheeses.
