Fosso Cancelli Pecorino 2016 Colline Pescaresi IGP
Grapes from vineyards in Pianella and/or Loreto Aprutino harvested by hand are placed inside small crates and transported to the winery. Crushing and pressing is carried out using a small crusher and an ancient wine press. The obtained must is transferred partly into of terracotta amphorae and partly into used French oak tonneaux. To start fermentation, the "pied de cuve" of indigenous yeasts obtained previously from the same grapes is added. Fermentation normally takes place in 7/10 days and The resulting wine is racked and aged on its noble lees in 15hl Slavonian oak barrels and in terracotta amphorae. Aging lasts about 2 years, after which the wine is racked and bottled without filtration.

TASTING NOTES: To the eye it has a beautiful deep yellow color with delicate floral hints of Elderberry and characterizing notes such as Ginger. In the mouth it has a delicate approach , long, round, soft and structured , but still with a good flavor and persistence, which make it pleasant to drink.
