8 '9 '10 Ribolla Gialla Riserva Joško Gravner wood-carved case
8.9.10 , is the new wine from Joško Gravner's winery made from a selection of Ribolla grapes, completely botrytised and left on the vines for a long time. A wine that is the fruit of the best grapes from three vintages: that of 23 November 2008, that of 12 November 2009 and that of 15 November 2010. Hence the name 8.9.10.
'For years I only vinified grapes that I thought were perfect,' Joško Gravner explains, 'but I was wrong. In 1998, I thought of my father's words: 'we are leaving the best part of the harvest on the ground'. That year, I also harvested and vinified botrytised grapes for the first time. In 2008, with my son Miha, a new idea: the first selection of Ribolla grapes, completely botrytised. This is how 8.9.10 was born'.
8.9.10 ferments in underground amphora, with long maceration of the stems as well, followed by ageing in small oak barrels and bottling under a waning moon in July 2015, without clarification or filtration.
